Sweet potato kibbeh (kubbet batata)

  • 9 ingredients
  • 13 steps

Ingredients

  • 2 cups mashed sweet potato (boil 3 large sweet potatoes, peel and mash them)
  • 1 cup fine semolina
  • 1/2 cup flour
  • 1 large onion, chopped
  • 300 g ground beef
  • 1/2 cup chopped walnuts
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Vegetable oil, for frying

Step-by-step preparation

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and cook until golden.
  3. Add the ground beef and cook until browned and cooked through.
  4. Add the walnuts and season with salt and pepper. Mix well and remove from the heat.
  5. In a large bowl, mix the mashed sweet potato with the semolina and flour until you have an even dough.
  6. Take a portion of dough and shape it into a ball in the palm of your hand.
  7. Make a hole in the center of the ball with your thumb and shape it into a cup.
  8. Place a spoonful of the meat and walnut mixture in the center of the cup and close it, shaping it like a croquette.
  9. Repeat with the rest of the dough and filling.
  10. Heat enough vegetable oil in a deep pan over medium-high heat.
  11. Fry the kibbeh until golden and crisp on all sides.
  12. Drain on paper towels to remove excess oil.
  13. Serve hot with a salad and/or yogurt sauce.

Enjoy these sweet potato kibbeh! They’re great as an appetizer or as a main course with a fresh salad.
