  • 9 steps

Ingredients

  • 500 g wheat flour
  • 25 g fresh yeast
  • 250 ml lukewarm milk
  • 50 g butter
  • 1 egg
  • 1 teaspoon salt
  • 200 g morcilla (Spanish black pudding)

Step-by-step preparation

  1. In a bowl, dissolve the fresh yeast in the lukewarm milk.
  2. Add the flour, melted butter, egg and salt. Knead until you have a smooth dough.
  3. Leave the dough to rise in a warm place for 1 hour, or until doubled in size.
  4. Preheat the oven to 200 °C.
  5. Slice the morcilla thinly.
  6. Divide the dough into small portions of the size you want and shape them into balls.
  7. Make a hole in the center of each bun.
  8. Place one or two slices of morcilla in the hole of each bun.
  9. Close the hole and seal well.

10. Place the buns on a baking sheet lined with parchment paper.

  1. Brush the buns with a little olive oil.
  2. Bake for 15–20 minutes, until the buns are golden.
  3. Let them cool before serving.

Black pudding brioche is perfect as an appetizer or as a main with a fresh salad. You can also vary the recipe with grated cheese, herbs, or even ham or sausages. Enjoy!
