  • 6 ingredients
  • 10 steps

Ingredients

  • 1 cup fresh or frozen raspberries
  • 1/2 cup sugar
  • 1/4 cup water
  • 1/4 cup raspberry liqueur
  • 2 egg whites
  • 1 pinch salt

Step-by-step preparation

  1. In a small saucepan, heat the raspberries, sugar and water over medium-high heat, stirring constantly, until the raspberries break down and the sugar has completely dissolved.
  2. Strain the mixture to remove the seeds and let it cool to room temperature.
  3. Add the raspberry liqueur to the cooled mixture and stir well.
  4. In a large bowl, beat the egg whites with an electric mixer until soft peaks form.
  5. Add the raspberry mixture and the pinch of salt to the beaten whites and keep beating until smooth and even.
  6. Pour the mixture into a whipped cream siphon.
  7. Charge the siphon with a gas cartridge following the manufacturer’s instructions.
  8. Shake the siphon vigorously for a few seconds.
  9. Hold the nozzle over a container and press the trigger to dispense the raspberry liqueur foam.
  10. Serve the raspberry liqueur foam in cups or glasses.

Enjoy this raspberry liqueur foam! It’s perfect as a dessert or with a cup of coffee or tea. Add a few fresh raspberries or a little whipped cream for extra flavor and texture.
