Canarian green mojo (mojo verde)

  • 7 ingredients
  • 8 steps

Ingredients

  • 1 bunch fresh cilantro
  • 4 garlic cloves
  • 1 teaspoon ground cumin
  • 1 tablespoon white wine vinegar
  • 1/2 cup olive oil
  • Salt and black pepper to taste
  • 1/2 teaspoon sweet paprika (optional)

Step-by-step preparation

  1. Wash and dry the cilantro and finely chop the leaves and stems.
  2. Peel and chop the garlic.
  3. In a mortar, pound the cilantro, garlic, cumin and salt into a smooth paste.
  4. Add the white wine vinegar and mix well.
  5. Gradually add the olive oil while stirring with a spoon until you have a smooth, even sauce.
  6. Add the sweet paprika (optional) and mix well.
  7. Taste and add more salt and black pepper if needed.
  8. Transfer the sauce to an airtight container and keep it in the fridge until ready to use.

Enjoy this delicious mojo verde, whose fresh, tangy flavor goes perfectly with fish, potatoes and meat! If you don’t have a mortar, make it in a food processor or blender. You can also use parsley instead of cilantro, or a mix of both, to create your own version.
