“Paella a mi manera” means “paella my way”: making the dish to suit your own tastes. Paella is a traditional Spanish dish that can be made in many ways, and there’s no single “right” recipe.
Start by choosing the ingredients you like best. Some of the most common are rice, saffron, chicken, rabbit, prawns, mussels, clams and vegetables such as green beans and peppers. Add or leave out ingredients as you see fit.
Heat olive oil in a paella pan or large, shallow skillet and sauté chopped onion and garlic until soft. Then add the meat and/or seafood and cook until browned.
Once the meat and/or seafood is browned, add the vegetables and cook for a few minutes until tender. Then add the rice and saffron and stir well to coat the grains in the oil and spices.
Add enough water or stock to cover everything and bring to a simmer. As the rice cooks, stir it occasionally and add more liquid if needed so it doesn’t stick to the bottom of the pan.
When the paella is done, garnish it with chopped parsley and lemon wedges and serve hot. Paella my way is a delicious, versatile dish that lets you be creative with flavors and ingredients – just adjust the cooking time and amount of liquid to suit what you use.
