Arroz con rape y marisco is a Spanish rice dish made with monkfish, seafood and a mix of vegetables and spices – flavorful and hearty, perfect for a special occasion or a treat.
Start by sautéing chopped onion and garlic in a paella pan or large, shallow skillet until soft. Add diced tomato and cook for a few minutes until it breaks down.
Then add diced red and green peppers, grated carrot and chopped green beans and cook for a few minutes until the vegetables are tender.
Add the rice and stir well to coat the grains in the oil and spices. Then add enough water or stock to cover everything, along with saffron, paprika, salt and pepper.
Once the liquid boils, lower the heat and add the monkfish and a mix of seafood such as prawns, mussels and clams. Simmer until the rice is cooked and the liquid has been absorbed, stirring occasionally so it doesn’t stick and cooks evenly.
Once ready, garnish with chopped parsley and lemon wedges and serve hot. The monkfish brings a unique flavor and texture, and the mix of seafood gives the dish a rich, complex taste. Customize it with peas, corn or olives if you like.
