Homemade arroz con pollo is a traditional Spanish dish of chicken and rice – a delicious, hearty meal that’s perfect for sharing with family and friends.
Start by seasoning the chicken pieces with salt and pepper and browning them in a large pot or Dutch oven. Once browned, take them out of the pot and set aside.
In the same pot, sauté chopped onion, garlic and bell pepper until soft. Then add diced tomato and cook for a few minutes until it breaks down.
Add the rice and stir well to coat the grains in the oil and spices. Then add enough water or stock to cover everything, along with saffron, paprika, salt and pepper.
Once the liquid boils, lower the heat and return the browned chicken to the pot. Simmer until the rice is cooked and the liquid has been absorbed, stirring occasionally so it doesn’t stick and cooks evenly.
Once the arroz con pollo is ready, garnish it with chopped parsley and serve hot. It’s tasty and satisfying, with tender chicken and perfectly cooked rice. You can customize it with peas, green beans or olives to your liking.
