Arroz a la milanesa

Arroz a la milanesa: a risotto-style rice dish made with Arborio rice, chicken or beef, vegetables, saffron and paprika. Easy and aromatic.

Arroz a la milanesa is a Peruvian rice dish similar to risotto, but with a Peruvian twist. It’s usually made with Arborio rice, chicken or beef, and a mix of vegetables and spices.

Start by sautéing chopped onion and garlic in a large pot or Dutch oven until soft. Then add diced chicken or beef and cook until browned.

Add diced red bell pepper, grated carrot and chopped green beans and cook for a few minutes until the vegetables are tender.

Add the rice and stir well to coat the grains in the oil and spices. Then add enough chicken or beef stock to cover everything, along with saffron, paprika, salt and pepper.

Once the liquid boils, lower the heat and simmer the rice until cooked and the liquid has been absorbed, stirring occasionally so it doesn’t stick and cooks evenly.

Once the arroz a la milanesa is done, garnish it with chopped parsley and serve hot. It’s flavorful and aromatic, with a touch of sweetness from the vegetables and a little kick from the paprika. Customize it with peas, corn or olives to your liking.
