Traditional semolina migas

  • 5 ingredients
  • 6 steps

Ingredients

  • 500 g wheat semolina
  • 1 liter water
  • 1 tablespoon salt
  • 200 g pancetta or chorizo
  • Olive oil

Step-by-step preparation

  1. Heat a little olive oil in a large frying pan and add the pancetta or chorizo. Fry until golden and crisp.
  2. Remove the pancetta or chorizo from the pan and set aside.
  3. In the same pan, add the semolina and stir well so it toasts a little.
  4. Add the water and salt and stir everything well. Let it cook over low heat for about 20 minutes, stirring from time to time.
  5. When the migas are cooked and have a soft texture, add the reserved pancetta or chorizo and stir well.
  6. Serve hot and enjoy your traditional semolina migas, usually served with fruit or vegetables, such as grapes, peppers or melon. You can also top them with a fried egg or serve them with a salad on the side. Enjoy!
