- 7 ingredients
- 9 steps
Ingredients
- 500 g stale bread
- 100 g pancetta or bacon
- 2 garlic cloves, minced
- 1 tablespoon sweet paprika
- Olive oil
- Salt to taste
- Water
Step-by-step preparation
- Cut the stale bread into small pieces and place them in a microwave-safe dish.
- Add enough water to cover the bread and let it stand for a few minutes to soften.
- Meanwhile, cut the pancetta or bacon into small pieces and brown it in a frying pan with a little olive oil. Add the garlic and paprika and sauté for a few minutes until fragrant.
- Add the pancetta and spice mixture to the dish with the bread and water.
- Add a little olive oil and salt to taste and mix everything well.
- Cover the dish with a lid or plastic wrap and microwave on full power for about 5–7 minutes.
- Take the dish out of the microwave and stir the migas well with a fork so they’re loose and evenly mixed.
- Cover again and microwave for another 5–7 minutes, until the migas are golden and crisp on top.
- Serve the migas hot, with serrano ham, chorizo, fried eggs or any other side you like.
