Semolina migas (Aunt Pura’s recipe)
- 6 ingredients
- 6 steps
Ingredients
- 500 g wheat semolina
- 1 liter water
- 1 tablespoon salt
- 200 g pancetta or chorizo
- 4 garlic cloves
- Olive oil
Step-by-step preparation
- Heat a little olive oil in a large frying pan and add the pancetta or chorizo. Fry until golden and crisp. Remove from the pan and set aside.
- In the same pan, add a little more oil and the peeled, chopped garlic. Fry until golden.
- Add the semolina and mix well with the garlic and oil, stirring constantly for a few minutes so it toasts.
- Add the water and salt and stir well. Let it cook over low heat for about 20–30 minutes, stirring from time to time so it doesn’t stick to the bottom of the pan.
- When the migas have a soft texture and are fully cooked, add the reserved pancetta or chorizo and stir well.
- Serve hot and enjoy your semolina migas the Aunt Pura way. They’re ideal with grapes or seasonal fruit, and can be topped with a fried egg or served with a salad on the side. Enjoy!
