Ingredients
To make Rioja-style potatoes you’ll need
- 1 kg potatoes, peeled and cut into large chunks
- 1 onion, chopped
- 3 garlic cloves, chopped
- 2 fresh chorizo sausages, sliced
- 1 red bell pepper, cut into small pieces
- 1 tablespoon sweet paprika
- 1/2 liter chicken stock or water
- Olive oil
- Salt to taste
Step-by-step preparation
Heat some olive oil in a large pot and sauté the onion, garlic and red pepper until soft. Then add the sweet paprika and stir well.
Add the sliced chorizo and stir so it combines with the other ingredients. Then add the potatoes and mix carefully.
Add enough chicken stock or water to cover the potatoes and season with salt. Cover the pot and cook over medium-low heat for about 30–40 minutes, until the potatoes are tender and the liquid has reduced to a thick sauce.
Serve the potatoes hot, with fresh bread and a glass of red wine. It’s a delicious, comforting dish, perfect for a winter afternoon or any time you want a traditional Spanish meal.
