Ingredients
To make my grandmother’s guisillo you’ll need:
- 1 kg beef, cut into small cubes
- 2 potatoes, peeled and cubed
- 2 carrots, peeled and cubed
- 1 onion, chopped
- 2 garlic cloves, chopped
- 2 serrano chiles, chopped
- 1 can peeled tomatoes (optional)
- 2 cups beef stock
- Vegetable oil
- Salt and pepper to taste
Step-by-step preparation
Heat some oil in a large pot and sauté the onion, garlic and serrano chiles until soft. Then add the beef cubes and brown them over high heat until well seared.
Add the potatoes and carrots and sauté for a few minutes until they soften slightly. If using, add the peeled tomatoes and stir well.
Add the beef stock and season with salt and pepper. Reduce the heat to medium-low and cover the pot. Simmer for 1–2 hours, until the meat is tender and the stew is thick and flavorful.
Serve my grandmother’s guisillo with white rice, refried beans and freshly made tortillas. It’s a comforting, flavorful dish, perfect for cold days or whenever you need some home cooking.
