Traditional rice pudding

  • 7 ingredients
  • 7 steps

Ingredients

  • 1 cup rice
  • 2 cups water
  • 1 cinnamon stick
  • 1 liter whole milk
  • 1 cup granulated sugar
  • Peel of 1 lemon
  • Ground cinnamon (for dusting)

Step-by-step preparation

  1. In a large pot, bring the rice and water to a boil over high heat. Add the cinnamon stick and cook the rice for about 15 minutes, until tender.
  2. Add the milk, sugar and lemon peel to the pot with the rice. Stir well.
  3. Cook over medium-low heat for about 30–40 minutes, stirring regularly so the rice doesn’t stick to the bottom of the pot.
  4. When the rice pudding is thick and creamy, remove the lemon peel and cinnamon stick.
  5. Pour the rice pudding into a large dish or individual bowls and let it cool to room temperature.
  6. Once cool, dust with a little ground cinnamon.
  7. Serve and enjoy.

Extra tips

  • For a creamier rice pudding, add a little more milk while it cooks.
  • Add raisins or pieces of fruit, such as apple or pear, while it cooks for a different flavor.
  • For a softer texture, soak the rice for a few hours before cooking.
  • Leftover rice pudding keeps in an airtight container in the fridge for several days.
  • Rice pudding is a perfect dessert after dinner or at a family get-together.

And that’s it! Now you know how to make a delicious traditional rice pudding. Enjoy!
