Cheese soufflé

  • 6 ingredients
  • 14 steps

Ingredients

  • 50 g butter
  • 50 g flour
  • 500 ml milk
  • 150 g grated cheese (any kind you like)
  • 4 eggs
  • Salt and ground black pepper

Step-by-step preparation

  1. Preheat the oven to 190 °C.
  2. Melt the butter in a saucepan over medium heat.
  3. Add the flour and mix well to form a paste.
  4. Add the milk gradually, stirring constantly, until the mixture is smooth and lump-free.
  5. Add the grated cheese and stir until it melts.
  6. Let it cool a little.
  7. Separate the egg whites from the yolks.
  8. Beat the egg whites to stiff peaks and set aside.
  9. Add the yolks to the cheese mixture and mix well.
  10. Season with salt and pepper.
  11. Gently fold the beaten whites into the cheese mixture so they’re incorporated without losing volume.
  12. Pour the mixture into a soufflé dish greased with butter.
  13. Bake for 25–30 minutes, until the soufflé is golden and well risen.
  14. Serve immediately – soufflés fall quickly.

Vary the recipe by adding ham, spinach, mushrooms or any other ingredient you like. Enjoy!
