Surf and turf stew

Guiso de mar y tierra: a Spanish stew combining prawns, mussels and squid with chicken or chorizo in a tomato, paprika and saffron sauce.

Guiso de mar y tierra (“sea and land stew”) is a delicious Spanish dish that combines seafood and meat in a flavorful stew. It usually includes a mix of seafood such as prawns, mussels and squid, as well as meat like chicken or chorizo.

To make it, start by sautéing chopped onion and garlic in olive oil until soft and fragrant. Then add chopped meat, such as chicken or chorizo, and cook until browned. Add some diced tomatoes, paprika and a pinch of saffron to the pot, and simmer for a few minutes so the flavors come together.

Once the stew base is ready, add the seafood, such as prawns, mussels and squid, and cook until the seafood is cooked through and the mussels have opened. Garnish with chopped parsley and serve with crusty bread or rice.

Surf and turf stew is a hearty, flavorful main course and a great source of protein, vitamins and minerals.
