Ingredients
- 1 cup macadamia nuts
- 1/2 cup granulated sugar
- 2 tablespoons unsalted butter
- 2 tablespoons water
- 1/2 teaspoon vanilla extract
- Pinch of salt
Step-by-step preparation
- Preheat the oven to 180 °C.
- Spread the macadamias on a baking tray and toast them in the oven for about 8–10 minutes, stirring now and then so they toast evenly.
- In a small saucepan over medium heat, combine the sugar, butter, water, vanilla and pinch of salt.
- Stir constantly until the sugar dissolves and the mixture is smooth.
- Turn the heat up to medium-high and bring to a boil. Cook for a few minutes until deep golden and slightly thickened.
- Add the toasted macadamias to the caramel and stir to coat them completely.
- Pour the caramelized nuts onto a sheet of parchment paper and let them cool for a few minutes.
- Separate the nuts and store them in an airtight container. Enjoy them as a snack or as a topping for ice cream, cakes and desserts.
Extra tips
- Be careful when handling hot caramel, as it can cause burns. Use heat-resistant utensils and oven mitts if needed.
- If you don’t want to use the oven, toast the macadamias in a frying pan over medium heat for a few minutes before adding them to the caramel.
- Add other spices to flavor the nuts, such as cinnamon, nutmeg or ground ginger.
- Caramelized macadamias keep in an airtight container in a cool, dry place for a few days.
