Sugar lace and sugar decorations

How to cut decorative lace edges and make sugar paste decorations (flowers, leaves, letters) to decorate communion cookies and cakes.

A lace cutter is a kitchen tool used to cut and shape dough for cookies, cakes and other desserts. It can also be used to cut fondant or cookie-dough decorations. Sugar decorations are a way of decorating desserts with designs and shapes made of sugar.

Ingredients

To make lace pieces

  1. Roll out the cookie dough or fondant on a flat, floured surface.
  2. Use the lace cutter to cut the dough into the shape you want: straight lines, curves, zigzags or any other design.
  3. Gently lift the cut pieces and place them on a baking sheet lined with parchment paper.
  4. Bake according to the recipe’s instructions.

To make sugar decorations

  1. Roll out the sugar paste (also known as fondant) on a flat, floured surface.
  2. Use the lace cutter or a cookie cutter to cut the paste into the shape you want: flowers, leaves, geometric shapes, letters, numbers or any other design.
  3. To color the sugar decorations, add food coloring to the paste before cutting, or paint them with food coloring after cutting.
  4. Let the sugar decorations dry for at least 24 hours before using them. You can speed up drying by placing them in a low oven (about 50 °C) for a few hours.

Step-by-step preparation

Once your lace pieces and sugar decorations are ready, use them to decorate your communion desserts: cookies, cakes, cupcakes or anything else you like. Enjoy creating beautiful, delicious decorations for your celebrations!
