Quick pastillage

  • 4 ingredients
  • 7 steps

Ingredients

  • 1 cup powdered sugar
  • 1 tablespoon water
  • 1 tablespoon lemon juice
  • Gel or paste food coloring (optional)

Step-by-step preparation

  1. In a medium bowl, mix the powdered sugar with the water and lemon juice until you have a smooth paste.
  2. If you want to color the pastillage, add a small amount of gel or paste food coloring and knead well until the color is even.
  3. Dust your work surface with powdered sugar so the pastillage doesn’t stick.
  4. Knead the pastillage with your hands for a few minutes until smooth and pliable.
  5. Roll out the pastillage to a thickness of about 2–3 mm.
  6. Use cookie cutters or modeling tools to create the shape you want. You can also use silicone molds for more elaborate designs.
  7. Lay the quick pastillage decorations on a flat surface and let them dry for at least 24 hours before using them on your desserts.

Quick pastillage is simpler and faster than traditional pastillage, as it needs no cooking or resting time. Keep in mind that it can be more fragile and less pliable than the traditional version, so it may not suit very elaborate or detailed decorations. But it’s an excellent choice for simple decorations, like figures or letters for cakes or cupcakes. Enjoy making your quick pastillage decorations and giving your desserts a special touch!
