Almond custard (natillas de almendra)
- 6 ingredients
- 7 steps
Ingredients
- 4 egg yolks
- 1/2 cup granulated sugar
- 2 cups whole milk
- 1/2 cup ground almonds
- 1/2 teaspoon almond extract
- 2 tablespoons cornstarch
Step-by-step preparation
- In a large bowl, whisk the egg yolks and sugar until well combined.
- In a medium saucepan, heat the milk and ground almonds over medium heat until hot but not boiling.
- Add the cornstarch to the yolk mixture, whisking constantly so no lumps form.
- Gradually add the hot almond milk to the yolk mixture, whisking constantly so the yolks don’t cook.
- Once all the milk is added, pour the mixture back into the saucepan and heat over medium heat, stirring constantly with a wooden spoon, until it thickens into a smooth cream.
- Remove from the heat and stir in the almond extract.
- Transfer the almond custard to an airtight container and let it cool to room temperature, then refrigerate for at least an hour before serving.
Enjoy your almond custard! This creamy dessert is perfect after dinner or as an afternoon snack, and also works as a tart filling or cupcake topping.
