Toasted noodles a la marinera (fideuà-style)

  • 10 ingredients
  • 9 steps

Ingredients

  • 200 g fine noodles (fideos no. 0)
  • 1/2 kg mixed seafood (mussels, squid, prawns, clams, etc.)
  • 1 medium onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 red bell pepper, finely chopped
  • 1 ripe tomato, peeled and finely chopped
  • 1 liter fish or seafood stock
  • Extra virgin olive oil
  • Salt and freshly ground black pepper
  • Chopped fresh parsley, to garnish

Step-by-step preparation

  1. In a paella pan or large frying pan, heat a little olive oil and add the noodles. Toast them over medium-low heat, stirring constantly with a wooden spoon, until evenly golden. Remove the noodles from the pan and set aside.
  2. In the same pan, add a little more olive oil and sauté the onion, garlic and red pepper until golden.
  3. Add the chopped tomato and cook for a few minutes until soft.
  4. Add the seafood and cook for a few minutes until cooked.
  5. Add the stock and bring to a boil.
  6. Add the toasted noodles to the pan and cook until they have softened and absorbed the stock, stirring occasionally.
  7. Season with salt and pepper to taste.
  8. Once the noodles are cooked, take the pan off the heat and let it rest for a few minutes.
  9. Serve the noodles in deep plates, garnished with chopped fresh parsley.

Enjoy your homemade toasted noodles a la marinera! It’s perfect for an elegant dinner or a meal with friends and family. You can also add other ingredients, like pieces of fish or chicken stock, for a different flavor, and adjust the amount of stock to get the consistency you prefer.
