Candied ginger

  • 4 ingredients
  • 9 steps

Ingredients

  • 1 cup fresh ginger, peeled and very thinly sliced
  • 2 cups water
  • 2 cups granulated sugar
  • 1/4 cup lemon juice

Step-by-step preparation

  1. In a medium saucepan, combine the ginger, water and lemon juice.
  2. Bring to a boil over medium-high heat, then reduce the heat to medium-low and simmer for 10 minutes.
  3. Drain the ginger, reserving the liquid.
  4. In the same pan, mix the sugar with 1 cup of the reserved liquid and bring to a boil over medium-high heat.
  5. Add the ginger and bring back to a boil. Reduce the heat to medium-low and simmer for 45–60 minutes, stirring occasionally.
  6. The ginger should become translucent and the mixture should thicken into a heavy syrup.
  7. Remove from the heat and let it cool for a few minutes.
  8. Lay the candied ginger on a rack to cool and let the excess syrup drain off.
  9. Once cool, store the candied ginger in an airtight container at room temperature for several weeks.

And that’s it! A delicious candied ginger treat to enjoy any time. The recipe is easy to customize, for example by adding cinnamon or cardamom to the syrup. You can also use candied ginger in desserts like cookies, cakes and tarts, or in savory dishes like salads and Asian recipes.
