Torrijas (Spanish milk-soaked French toast)

  • 8 ingredients
  • 6 steps

Ingredients

  • 1 day-old baguette
  • 1 liter whole milk
  • 200 g sugar
  • 1 cinnamon stick
  • Peel of 1 lemon
  • 4 eggs
  • Oil, for frying
  • Ground cinnamon, to decorate

Step-by-step preparation

  1. Cut the bread into slices about 1.5 cm thick.
  2. In a saucepan, heat the milk, sugar, cinnamon stick and lemon peel over medium-high heat until the sugar has completely dissolved.
  3. Take the pan off the heat and let the milk cool for a few minutes.
  4. In a large bowl, beat the eggs until well mixed.
  5. Dip each slice of bread in the milk for a few seconds, making sure it’s well soaked.
  6. Dip each slice in the beaten egg, making sure it’s well coated.

7. In a deep pan, heat the oil over medium-high heat until hot.

  1. Fry the torrijas in the hot oil for about 2–3 minutes per side, until golden and crisp.
  2. Remove them with a slotted spoon and drain on paper towels.
  3. Dust the torrijas with ground cinnamon and serve.

And that’s it! Delicious milk torrijas to enjoy. They’re very easy to make and perfect for any occasion, although they’re especially popular during Holy Week in Spain. Enjoy!
