Ingredients

  • 1 cup raw almonds
  • 6 cups water
  • 1/2 cup sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Ice

Step-by-step preparation

  1. Soak the almonds in water overnight or for at least 6 hours.
  2. Rinse the almonds and put them in a blender with 3 cups of water. Blend until smooth.
  3. Strain the almond mixture through a fine-mesh sieve and keep the liquid.
  4. Return the almond liquid to the blender and add the sugar, cinnamon, vanilla extract and the remaining 3 cups of water. Blend until well mixed.
  5. Strain again through a fine-mesh sieve to remove any bits of almond or sediment.
  6. Serve the almond horchata cold over ice with a pinch of ground cinnamon.

Enjoy a refreshing almond horchata that’s easy to make at home. For a creamier version, add a little evaporated or condensed milk before blending.
