Quark cheesecake (tarta de queso batido)

  • 7 ingredients
  • 6 steps

Ingredients

  • 200 g digestive biscuits
  • 100 g melted butter
  • 750 g queso batido (whipped fresh cheese, like quark)
  • 200 g sugar
  • 4 eggs
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Step-by-step preparation

  1. Preheat the oven to 180 °C and grease and flour a cake pan about 20 cm across.
  2. Crush the biscuits into fine crumbs. Add the melted butter and mix well. Press the mixture into the pan with a spoon until compact and even. Chill the pan in the fridge for about 30 minutes.
  3. In a large bowl, beat the fresh cheese with the sugar until smooth and well combined. Add the eggs one at a time, beating well after each. Add the lemon juice and vanilla and mix well.
  4. Pour the cheese filling over the biscuit base and smooth the top with a spatula.
  5. Bake for about 45–50 minutes, until golden and firm to the touch. Let the cheesecake cool in the pan for a few minutes, then carefully unmold it. Serve warm or cold, as you prefer.
  6. To decorate, dust with a little powdered sugar or top with fresh fruit like strawberries or blueberries.

And that’s it! I hope you enjoy this delicious quark cheesecake.
